Kanbayashi Shunsho Kuchikiri no Matcha Chiyo no Kotobuki
Kanbayashi Shunsho Kuchikiri no Matcha Chiyo no Kotobuki
Kanbayashi Shunsho Kuchikiri no Matcha “Chiyo no Kotobuki” | Limited Seasonal Uji Matcha from Kyoto, Japan
Created by Kanbayashi Shunsho Honten—one of Uji’s oldest and most respected tea houses with a heritage dating back over 450 years—Chiyo no Kotobuki (千代の寿) is a special Kuchikiri matcha released only once a year to celebrate the opening of the freshly aged tea jars at the start of winter.
This seasonal ceremonial-grade matcha captures the essence of Uji’s finest tencha, aged carefully to deepen its flavor, fragrance, and umami before stone-grinding into an exceptionally smooth powder. Chiyo no Kotobuki expresses the richness of Uji’s terroir with elegance and refinement.
Taste & Aroma Profile
Aroma: Deep, warm, and layered with notes of roasted chestnuts, shaded young leaves, and a soft sweetness. Fresh yet matured—representing the Kuchikiri tradition perfectly.
Flavor: Balanced and full without being heavy. Smooth, rounded umami leads into a gentle sweetness, followed by a clean finish with lightly roasted undertones.
Umami Level: Medium-high — rich and satisfying, with depth created from aged tencha.
Sweetness Level: Medium — natural, mellow sweetness that softens the savory body.
Bitterness: Low to medium — elegant, controlled, and pleasant, never sharp.
Texture: Extra-fine and silky, creating a velvety, creamy froth when whisked. The color is a soft, vivid Uji green.
