Ippodo Kan (寒) is a refined Japanese matcha produced by Ippodo Tea Co. in Uji, Kyoto. Crafted for those who appreciate balance and depth, Kan offers a generous umami core, gentle natural sweetness, and a touch of refined astringency that adds structure and character.
When whisked, Kan releases a pleasantly sweet, lingering aroma with soft green notes. The flavor is rounded and composed, with medium body and a smooth mouthfeel. As usucha (thin tea), Kan is an excellent everyday matcha, approachable yet expressive that pairs especially well with cookies, cakes, and light desserts.
